Ascutney Mountain
Located on a 270 acre farm and forest, Cobb Hill is a community of 23 families who are
exploring living in a socially and ecologically responsible manner. With ten agricultural
enterprises on the farm, cheesemaking was added in 2000 and has operated year-round ever since.
Made from a single, small herd of grass fed Jersey cows, this sweet and nutty cheese is similar
to European Alpine cheeses like Gruyere, Appenzeller, or Comte, Ascutney Mountain has a firm
texture, with small eyes (holes) scattered throughout the interior. Made with raw milk, it has
a buttery richness and a pleasant bite. It is aged for a minimum of eight months.
