Barat
Started by Catholic nuns from the Sacred Heart of Jesus order, this 200 acre working farm
serves as an educational facility that helps children (and adults) connect with the agricultural
and rural community. Those who spend time at the farm go there to work, study and learn about
service and community living. Sprout Creek's mission is to provide experiences in order to evoke
a desire to influence positive change in our world. Cheese is made from the rich, creamy milk from
their herd of grass fed Milking Shorthorns, Jersey, Brown Swiss and Guernsey cows.
Barat is an assertively, nutty cheese with a pronounced brown butter flavor. Its dense,
dry texture leaves a lingering sweetness that compliments its granular texture and earthy rind.
