Rosemary Honey Shrub with Mt Tam

With the New Year, many of us are thinking about ways to improve our health and wellness. Exercise regimes, meditation, and new diets abound. But what are we really craving? Comfort. Who says you can't eat your vegetables with a dollop of Crème Fraîche. This easy veggie soup recipe is silky and rich thanks to our organic cultured cream.

Makes two shrubs

Ingredients

2 tablespoons honey
2 tablespoons champagne vinegar (or apple cider vinegar)
3 small sprigs of rosemary (2 for garnish)
2 lemon wedges (meyer lemon if possible)
1 can lemon sparkling water (or Prosecco or Cava, for an alcoholic version)

Ice

Directions

  1. Add honey and one sprig of rosemary (washed and dried) to a small saucepan over medium-low heat, bringing to a gently simmer.
  2. Next add vinegar to mixture, stirring to combine, and continuing to simmer for 5 minutes (or until desired infusion strength is reached). Let cool to room temperature and remove rosemary.
  3. Add ice to two tumblers or old-fashioned glasses, and divide cooled infusion across the two vessels. 
  4. Top with the sparkling beverage of your choice (adjust strength to taste) and garnish with lemon wedge and rosemary sprig.

Let a wheel of Mt Tam soften to room temperature and wash it down with this effervescent shrub.
