An organic American original cheese recipe, our best-selling cheese has all the lusciousness you expect from a triple cream with a unique heart that upholds its texture. Named after the iconic landmark Mount Tamalpais that rises over the San Francisco Bay in Marin Country, Mt Tam cheese is produced with organic, locally-sourced milk and rises above the standard for bloomy rind cheeses. Mt Tam takes you from fudgey firmness to buttery softness with flavors spanning from bright creme fraiche to complex and mushroomy, evoking the North Bay’s lush green and gold pastures.

Experience the liquid gold rush from the hills of San Francisco with Wagon Wheel, a versatile, snackable cheese at its glory when melted down and forged into your favorite meal. Born from the sunshine of California’s rolling golden hills, Wagon Wheel is our most versatile and snackable cheese. At room temperature, it’s approachable and delicious. When melted, we call it Liquid Gold. Designed by chefs for chefs (originally on Zuni Cafe’s pizza menu), Wagon Wheel is a washed rind cheese crafted from organic cow’s milk and aged for a minimum of 75 days.

Old World Cheddar | Fiscalini Farmstead | Modesto, CA
Traditional Cheddar - Firm, Yet Crumbly - Buttery Taste

Old World Aged Cheddar is made in the traditional English style and remains our most popular and highly awarded cheese. It is firm, yet crumbly with a robust and buttery taste. During the 14-month aging process the wheels are wrapped in a cheesecloth to protect the outermost layer while allowing the cheese to breathe and develop internally. It is straw colored and has a nutty, slightly smoky, and earthy finish. This hard cheese is made from raw cow’s milk and handcrafted into 60-pound wheels.

This sweet ham is cured in the town of Langhirano, Italy, by the family-owned and operated Pio Tosini company, who is one of the most credible and sought-after producers of Prosciutto di Parma and has been in operation for over 80 years. Pio Tosini is known for remaining true to the quality and authenticity of the curing tradition.
