Mt Tam & Bulgogi Mandu for Lunar New YearPosted by Vanessa Chang on
Happy Lunar New Year 🐂🎉 our Marketing Director Vanessa shares her recipe for Korean dumplings, or mandu, with an unusual twist: our organic triple cream Mt Tam! Adding Mt Tam to a traditional filling of beef (or mushroom) bulgogi adds an extra dose of umami and a luxurious sauce to fill the dumpling. We love the textural contrast of pan-fried mandu with thinly sliced steak in the bulgogi, but they can easily be made vegetarian and steamed for a healthier option.

Mt Tam Tartine with Radishes & Herb SaladPosted by Cowgirl Creamery on
Life is all about balance. Eat your vegetables...but don't forget the cheese. This simple tartine (a fancy word for an open-faced sandwich) is made with Acme Bread Walnut Levain, red radishes, and a lightly dressed herb salad–the perfect counterpoint to our rich, organic triple cream. Adjust the greenery to whatever's in season (or in the garden) and add a punch of acidity and flakey salt to turn up the flavor. With notes of cultured butter and mushrooms, Mt Tam sings on this quick-and-easy toast.

Cheese Fricos with Wagon Wheel or Hop AlongPosted by Cowgirl Creamery on
Looking for a keto-friendly snack or the perfect wine pairing? All you need is grated cheese! We love making these Cheese Fricos with our aged Wagon Wheel or cider-washed Hop Along cheeses. Simply mound grated cheese onto a lined baking sheet and bake until crisp, about 2 to 4 minutes at 375F. Let cool flat on the baking sheet, or shape into a curved tuile or edible cup while warm.
An Update on our Good Neighbors: Victory Cheese BoxPosted by Cowgirl Creamery on
Over 6 months ago, we decided to give back to our friends and neighbors California artisan cheese industry–a community that has nourished and inspired us for all these years. At year's end, we've tallied over $20k in donations to the California Artisan Cheese Guild through our Good Neighbors: Victory Cheese Box, supporting artisan and small-scale cheesemakers in our home state. Thank you to all of you who made it possible: gifting and enjoying terrific California cheese for a good cause.
Baked Endive and Pears in Blue Cream SaucePosted by Cowgirl Creamery on
What does comfort food look like to you? For us, this creamy, winter seasonal recipe fits the bill: layered with bitter endive, sweet pear, and salty, rich blue cheese. Contrasting textures in a creamy, indulgent sauce makes all the difference in this cozy gratin.
Rosemary Honey Shrub with Mt TamPosted by Cowgirl Creamery on
Sweet, sour, bubbly, and aromatic, this easy non-alcoholic spritz is getting us through #DryJanuary. Paired with our most popular cheese (organic, triple cream Mt Tam), this all-ages beverage is bright and balanced and makes a perfect aperitif or post-dinner treat. This colonial era mocktail was initially prized for its medicinal properties, but we love it as a refreshing contrast to our soft-ripened cheeses.
