Happy Lunar New Year 🐂🎉 our Marketing Director Vanessa shares her recipe for Korean dumplings, or mandu, with an unusual twist: our organic triple cream Mt Tam! Adding Mt Tam to a traditional filling of beef (or mushroom) bulgogi adds an extra dose of umami and a luxurious sauce to fill the dumpling. We love the textural contrast of pan-fried mandu with thinly sliced steak in the bulgogi, but they can easily be made vegetarian and steamed for a healthier option.

This simple tartine (a fancy word for an open-faced sandwich) is made with Acme Bread Walnut Levain, red radishes, and a lightly dressed herb salad–the perfect counterpoint to our rich, organic triple cream. Adjust the greenery to whatever's in season (or in the garden) and add a punch of acidity and flakey salt to turn up the flavor. With notes of cultured butter and mushrooms, Mt Tam sings on this quick-and-easy toast.

Looking for a keto-friendly snack or the perfect wine pairing? All you need is grated cheese! We love making these Cheese Fricos with our aged Wagon Wheel or cider-washed Hop Along cheeses. Simply mound grated cheese onto a lined baking sheet and bake until crisp, about 2 to 4 minutes at 375F. Let cool flat on the baking sheet, or shape into a curved tuile or edible cup while warm.
